Sushi Roll
Ingredients
1 cup sushi rice
1tbsp rice wine vinegar
1 tsp salt
1 tbsp sugar
1 shallot
1 cucumber peeled and julienned (pickling is optional)
Cream cheese
1 fillet of salmon thinly sliced
1 nori sheet
fruitcake
Vinegar reduction
1 cup chinkiang vinegar (can be substituted for a black vinegar)
1/2 cup brown sugar
1.Add your vinegar and sugar to a small sauce pan
2. Place over low heat and reduce until it resembles the consistency of honey
Procedure
1.Wash your sushi rice and cook according to the instructions
2. In a small microwave safe bowl combine your rice wine vinegar, 1tbsp sugar and 1 tsp salt and microwave at 30 second intervals until the sugar and salt is fully disolved
3. Combine your vinegar with your cooked rice and set aside
4.Finley dice 1 shallot
5. Fry the shallot until golden brown then place on a towel to absorb excess moisture
6.Line your sushi mat with plastic wrap then lay down your sushi rice
7.Place your nori sheet on top of the rice followed by your salmon, cream cheese, cucumber, and fried shallots
8. Roll , season with furikake, then cut into 6 pieces
