Chicken Sandwich

Ingredients for buns(yields 6 buns)

10oz bread flour

4oz water

1 packet of instant yeast

4 egg yolks

.75oz sugar

1tsp salt

1 oz vegetable oil

2 tbsp honey

Procedure

1.In a stand mixer combine all of the ingredient and mix with the hook attachment for 5 minuets.

2.Flour a work surface and lay out your dough.

3. Divide into 9 2oz balls and place in a baking dish.

4.Cover with plastic wrap and let rise until doubled in size.(roughly 2 hrs)

5.Brush with egg wash and bake in the oven at 400 until golden brown around 15 minuets.

Chicken ingredience

chicken thighs

1 cup flour

1 12fl oz can of soda water

1 tbsp salt

1 tsp white pepper

1 tsp ceyene pepper

2 tsp chili powder

1 tsp oregano

2 tsp ground mustard

2 tsp paprika

1 tbsp onion powder

1 tbsp garlic powder

1 tsp cumin

extra flour for dredging

Procedure

1.In a large mixing bowl combine the flour and all of the seasonings and mix until combined.

2. Slowly pour the soda water into the flour mix while constantly whisking until it is fully combined.

3. Take your chicken thighs and dredge them in flour, then into the soda water mix then back to the flour one more time.

4. Bring your frying oil to 350F and fry your chicken until it reaches the internal temperature of 165F (roughly 3 and a half minutes)

Mayo

1 egg

1/2 cup vegetable oil

1/2 olive oil

1 tbsp dijon mustard

1/2 tsp salt

1 tsp white vinegar

1 tsp lemon juice

Quick Pickles

1 cucumber thinly sliced

1 cup white wine vinegar

1/2 cup water

1 tsp salt

1/3 cup sugar

1 sprig of dill

Procedure

1.In a small sauce pan combine the vinegar, water, salt, sugar and bring to a simmer

2. In a mason jar add your cucumbers and dill

3.Once the sugar and salt are dissolved then pour the Vinegar mix over the pickles and seal the jar and refrigerate
