Spicy Salmon Onigiri
Sushi rice ingredients
1 cup sushi rice
1 tbsp rice wine vinegar
1 tsp salt 1 tbsp sugar
Procedure
1. Cook the sushi rice following the instructions on the bag
2. In a microwave safe dish combine the sugar, salt, and vinegar then microwave for 1 minute
3. Once the sugar and salt are dissolved pour the mixture over your rice and mix till thoroughly combined
Spicy salmon ingredients
2 lbs salmon
1 lemon cut in half
1 bay leaf
2 tbsp coriander
1 star aniseed
2 tbsp salt
1/2 cup mayo
2 tbsp sriracha
1 tsp furikake
Procedure
1. To create a easy sachet take a coffee filter and add your coriander, bay leaf and star aniseed then tie it off with a rubber band
2. In a large pot add 3 quarts of water followed by your sachet, salt, and lemon, then bring the water to a light simmer(do not boil)
3. Once the water is at a simmer add your salmon and simmer until it reaches the internal temperature of 135F(roughly 10 minutes)
4. Place the salmon on a cooling rack until cool
5. In a large mixing bowl add your salmon with your sriracha, mayo, and furikake and then mix till combined
Vinegar reduction
1 cup chinkiang vinegar ( can be substituted for a black vinegar)
1/2 brown sugar
Procedure
1.Combine your vinegar and brown sugar in a sauce pan and reduce until it is the consistency of honey
