Chicken Parmesan

Ingredients

1 can of san marzono tomatos

1 small white onion fine dice

1 tbsp minced garlic

1 tsp red pepper flakes

1 tsp sugar

2 tsp Italian seasoning

salt to taste

black pepper to taste

2 chicken breast

flour for dredging

1 egg for eggwash

1 cup Panko bread crumbs

half a box of penne pasta

1/2 cup Parmesan cheese

Procedure

  1. Start by sautéing the onions and garlic until lightly cooked

  2. Add tomato sauce and seasonings and begin to simmer for 30-45 mins

  3. While the sauce is simmering flatten chicken breast with a meat mallet

  4. Season chicken breast with salt, pepper, and garlic powder

  5. Then dredge chicken in flour then egg wash and finish with panko

  6. Air fry (or bake in oven at 400) for 20 minutes or until chicken has reached internal temp of 165

  7. While the chicken is cooking add pasta to boiling water and cook according to the instructions.

  8. Once chicken is done top with the tomato sauce and a heaping handful of Parmesan cheese

  9. Place chicken in oven under the broiler until the cheese s melted and golden brown

  10. Toss the cooked pasta in tomato sauce plate and serve
