Thai Fried Rice

A spicy and savory shrimp fried rice, sautéed with fresh bean sprouts, green onion, carrots and shallots then garnished with toasted cashews and a slice of lime


Ingredients
1 lb peeled and deveined shrimp (seasoned lightly with salt and white pepper)

2 cups of day old rice

1 oz shredded carrots

1 oz sliced green onion

1oz bean sprouts

1 large shallot fine dice

3 cloves of garlic minced

1/3 cup soy sauce

1/4 tsp dried thai chili (or red pepper flakes)

2 tsp sesame oil

2 tbsp thai chili paste

4 scrambled eggs (cooked and set aside)

Procedure

1.Bring a wok over high heat and add a few tablespoons of oil

2.Add the garlic and the shallots to the wok followed by the shrimp

3.Sauté the shrimp until it is fully cooked then remove from the wok

4.Then add the green onion, carrots and bean sprouts and sauté for 30 seconds

5.Add the dried chili and Chile paste then sauté for another 30 seconds

6.Then add the rice and the cooked eggs and mix thoroughly

7.Around the rim of the wok add the soy sauce and the sesame oil and mix until combined

8.Garnish with toasted cashews, green onions, sesame seeds and a slice of lime
