Chicken Al Pastor Tacos
These tacos start with a savory marinated chicken, topped with fresh pineapple pico and cotija cheese.
Chicken al pastor
Ingredients
2 lbs chicken thighs
3 guajilo chiles (soaked in boiling water until tender)
1 chipotle chile
1 tbsp adobo sauce
1/2 of a grilled onion
5 cloves garlic
1/3 cup pineapple juice
2 tbsp olive oil
1/2 tsp cinnamon
1 tbsp cumin
1 tsp oregano
the juice of 1 lime
1 tbsp salt
Procedure
1.In a food processor combine the chiles, adobo sauce, garlic, onions, pineapple juice, olive oil, cinnamon, cumin, and oregano then blend until smooth
2.Place your chicken thighs in a large mixing bowl and season with salt and the juice of 1 lime
3.Cover the chicken in the marinade and mix until the chicken is thoroughly coated
4.Marinate the chicken for at least 1 hour and up 24 hours
5.Over a heated grill place down your chicken
6.Cook the chicken for 2 minutes then rotate 90 degrees and cook for another 2 minutes to create grill marks, then flip the chicken and repeat the process.
7. Cook the chicken until it reaches an internal temperature of 165F
8.Dice the cooked chicken and set aside for assembly
Pineapple pico
Ingredients
1 pineapple
1 jalapeño (small dice)
1/2 a white onion(small dice)
1/4 cup cilantro (chopped)
The juice of 1/2 a lime
2 tsp salt
Procedure
1.Remove the skin from the pineapple and cut into quarters
2.Place the pineapple quarters on the grill and cook until it develops a nice char on all sides
3.let the pineapple cool then begin dicing the pineapple into small pieces
4.In a mixing bowl combine the diced pineapple, jalapeño, onion, lime juice, and salt then mix until well combined
