Soup dumplings

Soup Ingredients

2 lbs pigs feet

1 knob of ginger peeled and chopped

2 small leeks

4 cloves of garlic

1 bay leaf

For Dumpling assembly

Dumpling wrappers

1/2 cup green onions

1 lbs ground pork

1 tsp grated ginger

2 minced garlic cloves

3 tbsp soy sauce

1 tsp rice wine vinegar

1 tsp shiro dash (optional)

1 tsp sesame oil

1/2 of your soup solidified

Procedure for soup

1.In a large stock pot boil your pigs feet for 10 minutes and then strain and rinse with water to remove impurities

2.Return the pigs feet to a clean stock pot and add the ginger, garlic, leaks, and bay leaf and cover with water

3. Simmer for 3-4 hours then strain through a chinois

4. Transfer broth to a baking dish with a lot of surface area and refrigerate until gelatinous

Procedure for dumpling assembly

1.Combine your ground pork with the garlic, green onion, ginger, soy sauce, sesame oil, and shiromdashi

2. Gently fold the solidified soup into the ground pork

3. Take a dumpling wrapper and fill with a small scoop of the the pork filling

4. Wet the edges of the wrapper with wrapper then fold like a taco and seal the edges by pinching and the press with a fork

5.Steam for 7- 8 minutes

6.Serve and enjoy
