Pumpkin Spice Sticky Buns

A soft and fluffy sticky bun with a pumpkin spice filling


Pumkin Spice Filling

Ingredients

1 cup pumkin puree

1/4 cup brown sugar

2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp allspice

(Combine everything in a mixing bowl and mix until combined)


Caramel Topping

Ingredients
4 oz butter

4 oz brown sugar

1/4 cup heavy cream

1/2 cup chopped pecans

Procedure

1.In a medium sauce pan melt the butter then add the brown sugar

2.Whisk together until the butter and sugar are fully combined

3.Once the butter and sugar are fully combined slowly pour in the cream while constantly whisking

4.Once combined pour into the pan you will be baking the rolls in

5.Cover with the chopped pecans



Dough

Ingredients

14.1 oz A.P Flour

5.8 oz Milk (Scalded and cooled)

2.4 oz Softened butter

2.4 oz Sugar

2 tsp salt

1 tbsp Honey

1 packet of Instant yeast

2 Egg yolks

Procedure

1.Dissolve the instant yeast in the cooled milk

2.Combine the rest of the ingredients in a stand mixer with a dough hook and mix for 8 minutes (scraping the sides of the bowl as needed)

3.Let the dough rest at room temperature for 1 hour

4.Refrigerate over night for the best results

5.Roll the out to to 1/4 of an inch

6.Trim the edges

7.Spread a thin layer of the pumpkin filling

8.Roll the dough into a log

9.Make 1 inch marks along the log then cut into rolls

10.Proof for 2 hours

11.Carfully transfer onto the Carmel and pecans

12.Brush with egg wash and bake at 400F for 30 minutes

13.Remove from the oven and flip the pan so the Carmel side is facing up
