Ice Cream Sandwich

Ice cream

1.2 oz water

4.4 oz sugar

3.4 oz egg yolks

11.4 oz heavy cream

1 tbsp vanilla bean paste

Procedure

1.Start by whipping your cream and vanilla until it reaches stiff peaks and set aside

2.In a small sauce pan combine sugar and water and slowly bring it to a boil

3.While the sugar and water are coming to a boil start whipping your egg yolks(whip on high until the yolks are light and fluffy)

4.Slowly pour the boiling sugar down the side of the bowl while mixing

5.Continue to whip on high until it has doubled in volume

6.Gently fold in the whipped cream in 3 parts

7.Find a circular mold of any size and line with plastic wrap

8.Fill the mold with the ice cream mix and freeze overnight

Chocolate cake

1 1/2 cup cake flour

1 tsp salt

1/2 cup cocoa powder

1tsp baking powder

1/3 cup dark chocolate

1/3 cup vegetable oil

1/2 cup sugar

2 eggs

3/4 cup milk

Procedure

1. Melt the chocolate and the oil in the microwave

2.In a mixing bowl add melted chocolate with sugar and mix till combined

3.Then whisk in eggs and milk

4.Sift the dry ingredients and fold into wet batter

5.Bake in the oven at 350F until set in the middle (5-10 minutes)

6.Transfer to a cooling rack and cool completely

7.Cut into disks to fit your ice cream pattys
