Chipotle Chicken Bowl
Grilled chicken ingredients
2 boneless chicken breasts
1 tsp salt
1tbsp cumin
1 tbsp chili powder
2 chipotle chilies
1/4 an onion
5 cloves garlic'
1/4 cup olive oil
juice of half a lime
Procedure
1.In a blender combine the chilies, onion, garlic, and olive oil and blend till smooth
2.In a small mixing bowl add the seasoning to your chicken followed by the lime juice.
3.Rub the pepper mix into the chicken and marinade for at least one hour and up to 48hrs
4. Over a hot grill lay down your chicken and cook for 2 minutes then turn chicken 90 degrees to create a grill pattern
5. Flip your chicken and cook until it reaches the internal temperature of 165F
Cilantro lime rice
1 cup long grain rice
1 cup water
1 bay leaf
salt to taste
juice of 1 lime
3 tbsp cilantro
Procedure
1. In a rice cooker add your rice water and bay leaf and cook until done.
2.In a large mixing bowl add the cilantro and lime juice and mix
3.Then add the cooked rice and mix until well combine
4. Season to taste with salt
Corn Pico
2 pieces of corn
1/2 poblano pepper fine diced
1/4 red onion fine diced
2 roma tomatoes fine diced
1/4 cup cilantro chopped
juice of half a lime
(for corn marinade)
1/2 cup basil
8 cloves garlic
1/4 cup olive oil
Procedure
1.Start by making your marinade by combining the basil garlic and olive oil and blend until smooth
2.Brush corn with the marinade and grill over high heat until it develops and golden brown char on all sides
3.Cut the corn from the cob and add to a mixing bowl followed by the tomatoes, onion, poblano, cilantro, and lime juice
4.Seaon to taste with salt
Garnish
I just garnished my bowl with a lime half and cotija cheese but you can top this bowl with whatever you want
