Vodka Pasta
Pasta dough
Ingredients
2 cups double 0 flour (all purpose works as well)
3 eggs
1 tbsp olive oil
1 tsp salt
water as needed
Procedure
1.Place your flour on your work surface and create a well big enough to hold the 3 eggs
2.Crack your eggs into the well of flour then add the salt and olive oil to the well
3.Slowly whisk the eggs together slowly combining them with the flour
4.Once it starts to resemble a dough start to knead it with your hands until smooth
5.Wrap the dough in plastic wrap and let rest for 30 minutes to an hour.(this is to let the gluten rest)
6.Once the dough has rested roll it out into desired shape
7.Cook pasta in boiling water until al dente (roughly 3-4 minutes)
Pasta sauce
Ingredients
1 tbsp olive oil
1 shallot Finley diced
3 cloves minced garlic
2 tsp sugar
1 tsp red pepper flakes
2 tbsp tomato paste
1/2 cup heavy cream
1/3 cup parmesan cheese
pasta water as needed
a splash of vodka
salt to taste
white pepper to taste
Procedure
1.In a skillet over medium heat add your olive oil
2.Sautee your garlic and shallots for roughly 30 secconds then add crushed red pepper and tomato paste
3.Cook everything for another 30 seconds then deglaze your pan with a splash of vodka
4.Slowly whisk in your heavy cream
5.Add your parmesan cheese and whisk till combined
6. Season the sauce to your liking then toss the pasta in the sauce
7.Garnish with fresh basil and serve
