Chicken Tacos

Chicken tacos

These tacos are filled with a slow braised shredded chicken, Oaxaca cheese, fresh cilantro and diced onion served with cilantro lime rice and a chicken consume.


Braised chicken

Ingredients

1 lb of chicken breast

1/2 and onion

3 cloves garlic sliced

2 tbsp cumin

1 tbsp tomato paste

3 guajillo peppers

1 quart chicken stock

1 bay leaf

1 cinnamon stick

vegetable oil for searing

Procedure

1.Heat a large pot over high heat and add a few table spoons of vegetable oil

2.Season your chicken generously with salt and then sear until golden brown on both sides(do not fully cook the chicken)

3.Remove the chicken from the pan and then add your onion, garlic, and tomato paste and cook for 30 seconds

4.Deglaze your pan with a few spoon fulls of the chicken stock and cook the mixture for another 1-2 minutes

5.Return the chicken to the pot and cover with the rest of the chicken stock

6.Add your peppers, bay leaf, cumin, and cinnamon stick to the pot and simmer for 1-2 hours(or until the chicken is fork tender)

7.Once the chicken is cooked remove it from the pot and shred with a fork then season with salt to taste

8.Remove the bay leaf and cinnamon stick form the pot and immersion blend the remaining stock, peppers, garlic, and onions until it forms a smooth broth

9.Add a few table spoons of the broth to the chicken to add flavor


Cilantro lime rice

Ingredients

1 cup of long grain rice washed

1 cup water

1 bay leaf

2 tbsp salt

2 tbsp chopped cilantro

2 tbsp lime juice

Procedure

1.Cook your rice with 1 cup of water and 1 bay leaf ,once cooked let the rice rest for at least 10 minutes

2.In a medium sized mixing bowl add your cilanto and lime juice then mix thoroughly

3.Add your rice to the bowl and season with salt then mix till combined


Assembly

Ingredients

yellow corn tortillas

chopped cilantro

diced onion

Oaxaca cheese

the braised chicken

the chicken broth

Vegetable oil for cooking

Procedure

1.Add your vegetable oil to a skillet and heat over medium-high heat

2.Dip your tortilla into the chicken broth then add to the heated skillet

3.Add your cheese, chicken, cilantro, and onion

4.Cook the tortilla until it is golden brown and crispy

5.Serve and enjoy
