Creme Brûlée Cheesecake

Ingredience

Filling

16 oz cream cheese

1/2 cup of sugar

2 whole eggs 1 egg yolk

2 tbsp heavy cream

1 tsp vanila

Crust

1 package of Biscoff cookies leaving 1 for garnish

1/4 cup butter

Procedure

1.Food process or blend your cookies until fine

2.Mix in butter until fully incorporated

3.Mold crust into your muffin tin and bake at 350 for 7-8 minutes

4.In a mixer cream together cream cheese and sugar until smooth and scraping down the sides of the bowl to prevent lumps

5.add eggs 1 at a time once they are fully incorporated add the rest of the ingredience

6.fill on top of the cookie crust them bake at 325 for 30 mins or until they are fully set with no jiggle in a waterbath

7.Place sugar on top and brûlée it, If you do not have a torch you can achieve the same effect with the broiler in your oven.
